A foodie has wowed thousands after she celebrated her birthday with a homemade sushi cake – complete with sashimi, seaweed and edible flowers.

Connie Cao, from Melbourne, shared an Instagram Reel showing exactly how she assembled the savoury birthday cake.

‘Why have birthday cake when you can have sushi cake,’ she wrote.

‘As you know I love my sushi, so this year I decided to step up my cake game and celebrate birthday week with a homemade sushi cake.

‘I had so much fun putting this cake together with my sister and decorating it with handpicked flowers from my garden.’

The lifestyle blogger – who has more than 80,000 followers – pressed a layer of rice to the base of a cake tin, followed by a sprinkle black sesame seeds, chopped prawns and shallots, topped with a nori sheet.

She repeated the step until the tin was full before she flipped cake upside down, placing it on a board. Connie then removed the tin to reveal the sushi cake. 

To decorate, she used sashimi, edible flowers and carrot shaped flowers.

Connie rolled the salmon and tuna sashimi to make rose shapes for the toppings. She garnished with rolled up cucumbers, parsley and scallops.

She used an abundance of edible flowers from her garden, filling in any gap to create a stunning sushi cake.

Her video has since been viewed more than 26,500 times, with many describing the cake as ‘too pretty to eat’.

‘This is literally the best cake I’ve ever seen – so impressed,’ one wrote, while another said: ‘I never knew that this is something I wanted, but I want it. Looks so yum.’

And another added: ‘Wow that is a magnificent cake. I need this in my life.’
